Heirloom tomato salad

This salad is unique because you can only have the Heirloom tomatoes for a short period. And why are these tomatoes so special? Well, it turns out that they are not modified at all; they have the same flavor as years ago, they have been from generation to generation, and that's why they have that name. Another reason why they are so special is that their flavor is earthy and fresh at the same time, and their flavor is stronger compared to the rest of the tomatoes that we find in the market.
And let's not forget about their unique colors and shapes that make them so original.
It's true that they are more expensive than the regulars, but is that unique flavor that it's only available for a short period.

Ingredients:

Yields 2 portions

- 2 large Heirloom tomatoes

- 1 large beetroot

- 1/4 cup of Pine nuts

- 10 Basil leaves

- Goat cheese

- Olive or basil oil

- Salt

Method:

1. Bring to boil for 25 the beetroot.

2. Cut in slices the beetroot and heirloom tomatoes, and chop basil.

3. Toast the pine nuts in a hot pan.

4. Serve the beetroot and the heirloom tomatoes on a plate, pine nuts, basil, and goat cheese, and drizzle with your favorite oil.
