Al Pastor tacos fish
Pineapple salsa (optional)
In a blender mix orange juice, annatto, cumin, oregano, salt and pepper, until you get a paste.
In a bowl, add the fish and toss the mixture from the blender and mix it up really well. Let it sit for at least 1 hour. (If you can prepare it with one night in advance it will boost the flavor)
In a hot pan, add a little bit of oil, and incorporate the marinated fish and stir it until is fully cook.
Make tacos ideally with corn tortillas and enjoy!
