This dish is really common in the mexican cuisine and I love it because it’s tasty but mostly because really easy. In this recipe I didn’t use any oil, so I think is a perfect dish for a weekly meal or dinner, that requires a few ingredients that probably you already have.

Cook the chicken
Wash the chicken breast and place them in a pot, add thyme, garlic and salt.
Let it cook for 25 min in medium-high, when is ready take them out right away, so the chicken won’t over cook.
Later shred the chicken.

Mix in a blender: tomatoes, chipotle peppers, garlic, oregano and salt.
Incorporate the sauce with the chicken
In a pan without oil place the sauce and then incorporate the chicken and mix it up all together. Let it cook for around 5-8 min.
The chicken is ready!
You can join it with tostadas, lettuce and radishes.
